Yellow Pepper and Courgette Gratin


I learned this recipe when I was in my first year of uni off a French girl living in our flat. In return I bought her fish and chips. She said it was the worst thing she'd ever tasted and it was from then that I knew it wasn't to be...
Anyway, this gratin is pretty nice. Gratin (or au gratin) means covered with breadcrumbs or in butter or cheese.

INGREDIENTS

Ingredients:
1 big courgette, sliced
1 yellow pepper, sliced
1 red pepper, sliced
1 clove of garlic, chopped finely
100g cheddar cheese, cut into thin slices
50g Mozzarella cheese, grated
salt and pepper

STEP 01

Get a frying pan and heat up a generous drop of oil.

STEP 02

Once it's hot, add the courgettes and fry until they are golden. Turn them to cook both sides.

Once they're all done, put them onto a plate or in a bowl to cool down. Turn the oven on to 180C.

Once they've cooled slightly, get a heatproof dish and lay the courgette slices down like tiles.

Cover with slices of cheddar cheese

STEP 04

Then cover that with the slices of red and yellow peppers.

STEP 05

Top with grated mozzarella cheese and put in the preheated oven for 30 minutes.

STEP 06

Take out and serve when the mozzarella on top melts and turns golden.
