Ingredients:
1 big courgette, sliced
1 yellow pepper, sliced
1 red pepper, sliced
1 clove of garlic, chopped finely
100g cheddar cheese, cut into thin slices
50g Mozzarella cheese, grated
salt and pepper

Get a frying pan and heat up a generous drop of oil.
Once it's hot, add the courgettes and fry until they are golden. Turn them to cook both sides.
Once they're all done, put them onto a plate or in a bowl to cool down. Turn the oven on to 180C.
Once they've cooled slightly, get a heatproof dish and lay the courgette slices down like tiles.
Cover with slices of cheddar cheese
