Spicy Beef Stir Fry

Have you ever wondered how to get the 'fluffy' style rice that you find in Chinese and Thai restaurants?  Well, it's actually pretty easy, and in this recipe I'll show you how it's done. 
The beef we'll use is sirloin or topside.  This is beef that's come from the top part of the cow.  It's a very tender (and fairly expensive) cut, but means that it doesn't take long to cook-perfect for stir fries.  We'll also marinate it in a spicy sauce which is way cheaper than anything bought from a jar.

INGREDIENTS

1 piece of topside/sirloin beef

½ onion, sliced

½ mug of white long grain rice

vegetable oil

For the marinade/sauce:

3 teaspoons of cornflour

5 teaspoons of soy sauce

1 lime

1 chilli, finely chopped (remove the seeds if you don't want it spicy-see the How To section to find out how)

1 clove of garlic, peeled and chopped

thumb sized piece of ginger, peeled and finely sliced

your choice of vegetables, as an example:

mushrooms

baby sweetcorn

peppers

beansprouts

broccoli

STEP 01

Start by slicing the beef into strips, using a clean plastic chopping board.  Put the strips of beef into a bowl.

Now, in a mug or another bowl, add the cornflour and pour in the soy sauce.  Mix this together until the cornflour dissolves.  Pour this in with the beef, then add the chopped chilli, ginger and garlic.  Squeeze in half the lime juice then stir everything together.  Leave to one side. 

STEP 03

Pour the half a mug of rice into a saucepan, then add 1 mug of water.  Stir, then put the heat onto full power.  You'll find that we're using much less water than usual when we're cooking rice, but what's going to happen is that the water's going to evaporate, and steam the rice.

STEP 04

Soon, the water will boil then form little holes in the bottom of the rice.  When you see this, put the lid on and turn the heat right down to it's lowest setting-either 1 or 2 if you're using electric, or just very low if you're using gas.  (It may help if you move the saucepan onto another hob while the first hob cools down-this will stop it bubbling over).

STEP 05

Heat a drop of vegetable oil in a frying pan over a high heat.  Once hot, add the onion in and fry for 2 minutes until soft.  Now add in the sliced beef, but leave most of the liquid in the bowl-we'll use this later.  Stir and fry the beef until it turns brown.

Add in the vegetables and keep stirring and frying until the beef is cooked.  Check by cutting one open and checking that the inside is brown and not pink.  Now stir in the rest of the liquid and squeeze in the other half of the lime.

Check on the rice.  By now, the water should be gone and the rice should be fluffy.  Spoon the rice onto the plate and then spoon on the beef stir fry.  Enjoy.
