There's only a handful of ingredients in this dish, which means it's cheap and quick to prepare. It's also very healthy as one of the main ingredients is tomatoes. Tomatoes are full of a natural chemical called lycopene, a powerful antioxidant that helps protects against free radicals that cause cancer. This is great for lunch or as a light dinner and goes really well with some bread to mop up the juices.

1 red pepper cut into strips
1 yellow pepper cut into strips
1 tin of chopped tomatoes
2 cloves of garlic chopped finely
pinch of mixed herbs

Once they have turned a light brown colour, add the peppers and cook for about 5 to 10 minutes.
Add the chopped tomatoes and stir everything together. Add a big pinch of mixed herbs and season with salt and pepper.
Turn the heat down to about 3/4 if you're using gas or about 7 if you're on electric.
Serve with some bread.
Note: If you want, you can add some cubed salami or pepperoni to make it a bit meatier.
