Honey and Mustard Bangers with Cheddar Mash

Ingredients:
2-3 sausages (depending on how hungry you are)
1 - 1/2 potatoes (peeled and chopped into chunks)
handful of grated cheddar cheese
milk
butter
honey
wholegrain mustard
pinch mixed herbs

STEP 01

Fill a saucepan 3/4 full of water and put it on the hob to boil.  Turn the grill on.

Peel and chop up the potatoes. You want them about this size.

Once the water is boiling, put a pinch of salt in, then carefully put your potatoes in. These are going to take about 15 minutes to cook.

Put your sausages under the grill.  (If you've got any kitchen / aluminium foil, line the bottom of your grill tray.  It will help cook the sausages a little quicker).

Every five minutes or so, just check on your sausages.  Get a fork and turn them over so the palest part of the sausage faces the top of the grill.

We'll make the honey and mustard mix now.  Get a bowl then add roughly a spoon (dessert spoon size, not teaspoon) of honey and a spoon of mustard.  (Feel free to add less mustard if you're not keen on the taste of it.)  Mix them together so it's a nice and runny mixture.  Leave it to one side.

Fifteen minutes later, check your potatoes.  Get a fork and press into them.  If your fork goes easily through the potatoes, making them fall apart in the water, then you know they're cooked.  If they're still a little hard, boil them for five minutes longer.  If they're ready, take them out and drain them in a colander.

After draining them, put them back in the pan.

Add a drop of milk into the pan (when you pour it in, count to 1 second.  That's how much milk you want to put in there) and a big chunk of butter.  Get a potato masher and give em a good mash.

When the potatoes have been mashed up well, grab a handful of cheese and put it into the mix.  Keep mashing.  We want the mixture to be nice and fluffy.

If it's starting to look a little dry, add a tiny drop more milk, but honestly, only a tiny drop.  You don't want to swamp it with milk.  If on the other hand it's looking too wet, put the saucepan back on the hob, over a low heat, or the ring you just took the pan off (if it's still hot.)  Keep mashing until the heat evaporates some of the liquidness.

When your mash is done, put it on a plate and get your sausages out from the grill.  You'll know if they're cooked by their dark brown colour on the outside.  With a fork, get your sausages and dip them into the honey and mustard mixture, coating them well.

Pile them on top of the mash and eat.
