Get a big saucepan 3/4 full of water and put it on the hob, lid on, full power, to boil.
Wash the potatoes under cold running water to get rid of any mud or dirt, then dry with a clean tea towel.
Don't peel the potatoes, leave the skin on, but chop them up into chunks (about as big as a big dice...if that makes sense...)
Once the water in the saucepan is boiling, add a bit of salt then add the potatoes.
Put them in a bowl and add a big dollop of tomato ketchup. Mix it in with the corned beef.
Peel and chop the onion.
Get a frying pan and add a drop of oil (olive, vegetable or groundnut, but not castrol) into the pan and heat it up. You want quite a high heat.
Once it's hot, add the onion and fry for a little bit.
Check the potatoes, they want to be about 80% cooked, so your fork should just be able to go through them. We'll finish them off by frying them. If they're ready, drain them in a colander.
Add the potatoes into the frying pan with the onion and fry for about five minutes.
Add the corned beef. Mix it all together.
If you've got any worcester sauce knocking around, a good couple of shakes to give it a bit of a kick.
Then once the potatoes are cooked (test it by putting a fork through them, if it goes in easily, they're cooked) dish it up on four plates.
And if you've got eggs, once you've plated it up, add a fried egg on top to give it a bit of gooey goodness.
